There’s something special about a good banana bread. Comforting, simple and familiar. This one is made with real ingredients, ripe bananas, ground almonds and a generous scoop of Purition Banana, for a nourishing loaf that’s just sweet enough and full of goodness.
INGREDIENTS
- 3 ripe bananas (about 300g peeled)
- 2 large eggs
- 60ml maple syrup or honey (We used Honey Heaven UK)
- 60ml milk
- 80g Purition Banana
- 120g ground almonds
- 1 tsp baking powder
- 1/2 tsp bicarbonate soda
- 1 tsp cinnamon (optional)
- Pinch of salt
- 40g roughly chopped nuts (optional)
- 1 banana sliced lengthways for decoration (optional)
METHOD
- Preheat the oven to 180°C (160°C fan) and line a loaf tin
- Mash the bananas in a large bowl until smooth
- Whisk in the eggs, maple syrup and milk
- Stir in the Purition Banana until combined
- Add the ground almonds, baking powder, bicarbonate soda, cinnamon and salt. Mix gently
- Fold through nuts if using
- Spoon the mixture into the loaf tin and smooth the top
- Bake for 45-55 minutes, until golden and a skewer inserted into the centre comes out clean
- Leave to cool fully before slicing (this helps it set)
