Soft, gently spiced and naturally sweet, these Banana Bread Energy Balls taste like a bite-sized version of your favourite loaf. They’re perfect for busy days when you want something nourishing that still feels like a treat.
INGREDIENTS
- 50g Purition Banana
- 1 cup of pitted dates
- 1 cup unsalted mixed nuts
- 3 tbsps ground almonds
- 1 tsp cinnamon
- Pinch of salt
Optional:
- Chopped nuts
- Cocoa powder
- or cinnamon for rolling
METHOD
- Soak the dates in off-the-boil water for 5 minutes
- Pulse the nuts in a food processor with the Purition Banana, ground almonds, cinnamon and salt
- Drain the dates and add them to the processor with the Purition Banana, ground almonds, cinnamon and salt
- Pulse until the mixture comes together. If it feels a little soft, add an extra spoon of ground almonds. if it feels a little firm, add one more date or a splash of water
- Scoop and roll into balls using a tablespoon if you want them all the same size
- Roll in chopped nuts, cocoa powder or cinnamon, if you'd like a finishing touch
- Store in the fridge for up to 5 days
