When that chocolate craving hits but you want something nourishing, this simple mug cake has you covered. Made with a handful of real ingredients and Purition Chocolate!
INGREDIENTS
- 40g Purition Chocolate
- 3 tbsp ground almonds
- Pinch of sea salt
- 1 large egg
- 1 tbsp maple syrup or honey
- 2 tsp extra virgin olive oil
- 1/2 tsp vanilla extract - optional but if you have it, definitely use it
METHOD
- Make this cake in the mug you'll cook it in
- Place the dry ingredients (40g Purition Chocolate, ground almonds, pinch of salt) into the mug. Stir to combine.
- Add the egg, maple syrup, olive oil and vanilla to the mix. Whisk with a fork until you have a smooth cake batter.
- Make sure the mug isn't filled to the brim - leave around 2cm at the top so it doesn't spill over.
- Place the mug in the microwave. Cook for 60 seconds. Check on the cake - if it's still a little undercooked, cook for a further 10-20 seconds until it's done to your liking (microwave ovens can vary a lot).
- Serve immediately while it's nice and warm. Add toppings if you like!
- We added an extra drizzle of maple syrup and some chopped pistachios - a dollop of yoghurt or cream would be nice too!
